KERALA STYLE BEETROOT PACHADI
INGREDIENTS
Beetroot - 1 (Grated finely)
Grated coconut - 1/2 cup
Green Chilly - 3 nos
Cumin - 1/4 tsp
Shallots - 4 nos
Ginger - small piece
Oil
Mustard seeds - 1/2 tsp
Curd - 5 tbsp
Salt
Curry leaves
METHOD
Heat oil in a pan and cook the grated beetroot till it become soft.
Grind the grated coconut, shallots, cumin, ginger and green chillies in to a smooth paste.
Heat oil in a pan , add mustard seeds , when the mustard seeds splutters add curry leaves , prepared coconut paste and cooked beetroot.cook it for a couple of minutes.
Remove it from fire, add curd, salt and combine well.
Serve it with rice.
