padavalanga theeyal / snake gourd


Ingredients

snake gourd sliced  - 1 cup

grated coconut- 1 /2 cup

garlic - 3

ginger  - 1  small piece

curry leaves - 2  stalk

turmeric powder - 1 /4 teaspoon

salt- as needed

coriander powder - 3 teaspoon

chillie powder - 3 teaspoon

Tamarind - 1  lime sized

shallots- 3 or 4 pieces

Method


In a pan, dry roast the grated coconut till it turns brown.Add chillie powder, turmeric powder, coriander powder, ginger, garlic, curry leaves, shallots and fry for 1 or 2 minutes. Make sure not to get the coconut burnt.After cooling grind this mixture in to a smooth paste adding 2 tablespoon water.

Squeeze the tamarind in 1/2 cup water and keep it aside.

Cook the snake gourd in oil.

Take a pan, add oil, mustards,shallot,curry leaves and fry for 1 or 2 minutes.then add the cooked snake gourd,the smooth paste and a cup water and cook it.Add enough salt

Add tamarind water to this and cook for 2 to 3 minutes.
