VATTAYAPPAM / STEAMED SWEETENED RICE CAKE
INGREDIENTS
Rice Flour - 2 cup
Cumin - a pinch
Cooked Rice - 2 tbsp
Ghee - 1 tsp
Raisins and cashewnuts - for garnishing
Yeast - 1/2 tsp
Sugar - 1/2 cup
Coconut - 1
METHOD
Grind rice, 1 tbsp sugar,cumin and yeast well then add rice flour and water to it and again grind it well to make a smooth paste.Make sure that the batter is not too loose.
Set it aside to ferment for 6- 8 hrs.
After 6-8 hrs, add sugar and 1/2 tsp salt and keep it aside for another 1/2 hour.
Now grease the stainless steel flat plate with ghee and pour the batter to the plate.
Garnish it with cashew nuts and raisins fried in ghee.
Steam it for 20- 30 minutes.
