KUMBILAPPAM/ STEAMED JACKFRUIT DUMPLINGS


INGREDIENTS

Ripe jack fruit bulbs  grinded in a grinder - 2 cup 

Rice Flour - 1& 1/2 cup

Grated coconut - 1 cup

Cumin Seeds - 1/4 spoon

Jaggery -  1

Cardamom - 4 nos

Vazhana illa or bay leaves - as required

METHOD

Melt the jaggery with 1/2 cup water . Remove the impurities and set it aside.


In a blender ,add the  finely chopped jack fruit and make a smooth paste without adding water.

Add the jack fruit paste along with melted jaggery in a vessel and cook it in a low flame to   the water content. Stir continuously

On cooling add powdered cumin,cardamom powder and grated coconut.

Then add rice flour little by little and make a smooth dough.Fold the bay leaves in cone shape and fill this batter in it.

Steam it.
